Proceeds from the event benefit Capstone Adaptive Learning and Therapy Centers' many educational and therapy programs for children and students with developmental disabilities. ''Jambalaya is a rice dish with meat or seafood, similar to Spanish Paela! The word is said to come from the Provencal word ''jambalaya,'' meaning mish-mash or pilaf. Very popular dish in South Louisiana but not less popular in Pensacola, Florida and along with great music and location ''Ehe! Laissez les bons temps rouler! You'll love it! Guaranteed!'' said Dr. Sherry A. White President/CEO of Capstone. Last year, Randy Bricker (The Boss) and Mark Thorton (The Pig) took first place in Judges and People's choices, The Bayou Boys and Voo Doo BBQ swept the second places and coming in third places Jerry Mistretta and the Bayou Boys. All in all, fun was had and there were some great variations to the Cajun creation! Capstone Adaptive Learning and Therapy Centers provides quality care for children and students with a spectrum of abilities and disabilities since 1953.
